採用法國全素42% plant based 朱古力
配上自加製15%焦糖開心果雲呢拿蓉及
以植物油焗製酥皮絲而成

隨着飲食文化，大家都趨向健康，
某部份朋友亦都傾向全素飲食。
而全素飲食嘅定義就包括非肉類、海鮮、以及以動物製作嘅副產品
包括雞蛋、牛奶、蜜糖等。
亦都因為缺少咗牛奶同雞蛋令到全素甜品難以製作。

經過反覆測試及細心挑選食材製作，
包括採用比一般朱古力貴接近一倍價錢嘅全素朱古力、
以植物油取代牛油焗製酥皮絲、
以及不採用脫脂奶粉及乳製品等製作開心果蓉。

亦考慮全素朱古力可可成份有42%唔算高
而比黑朱古力58%為甜，
我哋亦都調教咗開心果蓉嘅甜度
由最初20%焦糖成份下降至15%，
添加馬達加斯加雲呢拿籽混合喺開心果蓉
及再加入伊朗開心果、美國開心果更加入酥皮絲層。

食感: 由於全素朱古力沒有乳製品成份，
所以質感會比較嚡，少咗一般傳統朱古力嘅絲滑感，
但就依然擁有可可香嘅特性。
而酥皮絲層由於無牛油成份，
所以整體開心果香更加濃烈。
配上伊朗及美國開心果粒更顯層次感！

Vegan Dubai Dark Chocolate with Pistachio

Using 42% plant-based French chocolate,
aired with house-made 15% caramelized pistachio vanilla filling,
And crispy strands made with plant-based oil.

As the culture around food evolves,
people are leaning toward healthier options.
Some individuals are also adopting a vegan lifestyle,
which excludes not only meat and seafood
but also animal-derived products like eggs, milk, and honey.

However, the absence of milk and eggs
makes it challenging to create vegan desserts.
Through repeated testing and careful ingredient selection,this creation was born.
It features vegan chocolate that costs nearly twice the price of regular chocolate,
crispy strands baked with plant-based oil instead of butter,
and pistachio filling made without skim milk powder or dairy.

Considering that vegan chocolate has a cocoa content of 42%,
hich is not particularly high and sweeter than 58% dark chocolate,
adjustments were made to the sweetness of the pistachio filling.
The caramel content was reduced from an initial 20% to 15%.
Madagascan vanilla beans were added to the pistachio filling,
along with Iranian and American pistachios, layered with crispy strands.

Texture: As vegan chocolate lacks dairy ingredients,
its texture is slightly firmer and less silky than traditional chocolate,
yet it retains the distinct aroma of cocoa.
The crispy strands, being free of butter, highlight a more intense pistachio flavor.
The addition of Iranian and American pistachio pieces
enhances the overall complexity.
